Take a Bite Out Brunch With Boone’s French Toast Recipe

Whether you’re serving up a holly jolly holiday brunch or simply looking to take your breakfast to the next level, Boone’s Executive Chef Jason Stern has whipped up a sure fire French Toast recipe topped with homemade cranberry compote and whipped cream that will leave the pickiest of eaters beginning for seconds. Boone’s French Toast Topped With Whipped Cream and Cranberry CompoteCranberry Compote:

Ingredients:
1lb cranberries
1 cup orange juice
1 cup sugar
1 cinnamon stick

Directions:

  1. Mix all ingredients in a small sauce pot. 
  2. Cook on medium low heat for 15 minutes. 
  3. Lightly smash with a wooden spoon. 
  4. Remove cinnamon and set aside. 
  5. Cover flush with plastic so a skin does not form.

Whipped Cream:

Ingredients:
1 cup of whipping cream
2 tbsp powdered sugar

Directions:

  1. With a whisk, vigorously whip cream and sugar until stiff peaks are reached. 
  2. Set aside or cover and refrigerate.

French Toast:

Ingredients:
12 eggs
2 cups cream
1 Tbsp vanilla paste
½ cup powdered sugar

Directions:

  1. Whisk the eggs, cream, vanilla, and sugar in a medium mixing bowl until smooth. 
  2. Pour into a large dish that will accommodate the sliced bread. 
  3. In alarge iron skillet or non-stick pan, melt about 1-2 tablespoons butter over medium heat.
  4. While butter is melting, dip 2 pieces of bread in the milk mixture for about 5 seconds per side. 
  5. Place in the skillet and cook for 3-4 minutes per side until golden brown on both sides. 
  6. Store in a warm oven while you finish cooking all sliced bread.
  7. Serve with compote, whipped cream, and warmed syrup.
