Brasserie Margot Spotlights The Art of Peach Season
Every summer, Georgia peaches find their way into farmers markets, cocktails, desserts, and restaurant menus across the state. At Brasserie Margot at the Four Seasons Hotel Atlanta, they’re taking center stage. Available now, The Art of Peach Season is a limited-time three-course prix fixe menu from Chef de Cuisine Christophe Truchet and Executive Pastry Chef Eric Snow celebrating one of the South’s most iconic ingredients.
Priced at $55 per person, guests may begin with either chilled Gazpacho de Tomate topped with sourdough croutons or Salade de Pêches featuring roasted peaches, fresh burrata, caramelized pecans, arugula, and balsamic vinaigrette. Entrée selections include Poulet Rôti served with Provençal ratatouille, natural chicken jus, and basil oil, or pan-seared Georgia mountain trout accompanied by pistou de légumes and sauce vierge. The experience concludes with Peach Melba, a classic summer dessert reimagined by Snow with peach, raspberry, and almond.
“This menu captures everything I love about cooking in the summer,” says Truchet. “The ingredients are vibrant, the flavors are bright, and every course reflects what is at its best right now. We approached it thoughtfully from beginning to end, creating a menu that feels celebratory, seasonal, and uniquely Brasserie Margot.”
The prix fixe menu arrives alongside several additions to Brasserie Margot’s dessert offerings from award-winning Executive Pastry Chef Eric Snow, whose menu blends classic French pastry techniques with the flavors of summer. New favorites include Peach Melba, Strawberry Vacherin with whipped cream and vanilla ice cream, Banana Crème Brûlée served with a passionfruit beignet, and a tableside Cherries Jubilee finished with Kirschwasser.
Guests can also pair the menu with the Pêche & Elderflower, a refreshing combination of fresh Georgia peach, elderflower, and sparkling wine. Available with or without alcohol, the seasonal cocktail offers another way to experience one of Georgia’s most anticipated harvests.
